Mexican Lime Soup

The combination of hearty potatoes and refreshing lime is unbeatable and a nice surprise for the palate.

Directions

Heat olive oil over medium-high heat. Add diced onions and a pinch of salt. Saute, stirring occasionally, until onion browns slightly around the edges. Add garlic, sauteing for 2 minutes more. Add water, squash, potatoes, tomatoes, bouillon cubes, and cumin seeds. Bring to a boil Reduce heat and simmer, covered, for 25 minutes or until potatoes are cooked through. Add umeboshi vinegar and sea salt to taste. Simmer 5 more minutes. Squeeze in lime juice. Serve topped with avocados and cilantro.
