Gluten-Free Valentine Cookies

Happy Valentine's Day! Impress a loved one with a plateful of these little cookie gems, each sparkling with a jelly-filled heart.


  • Bob's Red Mill Gluten Free All Purpose Flour
  • 1 cup organic rolled oats
  • 1 cup organic pecans
  • 1 teaspoon xanthan gum
  • 1/4 teaspoon white sea salt
  • 1/2 cup organic safflower oil
  • 1/2 cup organic maple syrup
  • 1/2 teaspoon organic vanilla extract
  • zest of 1 organic orange
  • 1 cup organic fruit juice sweetened raspberry fruit spread



Preheat the oven to 350F. Line a baking sheet with parchment paper. Roll a 4x4 inch piece of foil into a loose ball. Firmly shape the ball into a 1 1/2-inch heart. Set aside. Combine the flour, rolled oats, pecans, xanthan gum, and sea salt in a food processor. Process until pecans and rolled oats are coarsely ground. Add the safflower oil, maple syrup, vanilla extract, and orange zest and pulse to combine. Dough should begin to gather into a ball. Roll 1 1/2-inch balls of dough and place on cookie sheet. Press foil heart into cookies. Fill indentation with strawberry fruit spread. Repeat with remaining dough. Bake at 350F for 15-20 minutes or until edges of cookies are golden and fruit spread is bubbling.
