Texas Chamomile-Peach Popsicles
Yield:
12 small popsicles Ripe Texas peaches are soft, juicy, and super sweet! They make a smoothie-like popsicle that is both rich and cooling at the same time. If you can't find Texas peaches, choose another small to medium variety, preferably one that is soft and sweet.
Ingredients:
10 Texas peaches
6 tablespoons agave nectar
2 bags of chamomile tea
juice and zest from 1/2 lemon
1 pinch sea salt
Directions:
Cut the peaches in half and place in a blender. Add agave nectar, chamomile from the tea bags (open and empty into the blender), lemon juice, and salt. Process until pureed.
Stir in lemon zest and add more agave nectar if desired. Popsicles should be slightly sweeter than you would normally prefer because sweetness is dulled in frozen desserts.
Pour into popsicle molds or Dixie cups and insert popsicle sticks. Freeze 4 hours or overnight.
