Italian Brown Rice Salad
This salad is surprising light and refreshing for a rice salad and loaded with flavor! Salute!
Ingredients:
1 1/2 cups organic medium grain brown rice soaked at least 4 hours or overnight
3 cups filtered water
Pinch Sea salt
2 tablespoons organic brown rice vinegar
2 tablespoons organic Dijon mustard with horseradish
1/4 cup organic extra virgin olive oil
zest of 1 organic lemon
1 small zucchini squash diced
2 green onions thinly sliced
2 tablespoons capers
1 cup parsley finely chopped
Directions:
Cook brown rice with soaking liquid and pinch of salt on low heat for 50 minutes. Place rice on baking sheet to cool. Whisk together dressing of vinegar, mustard, olive oil and lemon zest and allow flavors to meld for at least 15 minutes. Combine zucchini, onions, capers and parsley with cooled rice and mix with dressing. Let set for at least 15-30 minutes. Serve at room temperature.
