Cantaloupe-Lime Popsicles


Yield: 
12-16 small or 10 large popsicles

Here in Texas, the August heat is scorching. These popsicles can be prepared in minutes and frozen in just a few hours for a zesty, refreshing treat.

Ingredients: 
1 cantaloupe
1/4 cup lime juice
1/4 cup agave nectar
1 pinch sea salt
zest from 1 lime

Directions: 

 Cut the cantaloupe roughly into 2-inch chunks. Combine with lime juice, agave nectar, and sea salt and blend until pureed. Stir in lime zest and additional agave nectar to taste. The puree should be slightly sweeter than you would usually prefer. The freezing process tends to dull the sweetness. 

Pour into popsicle molds or dixie cups and insert popsicle sticks. Freeze for 4 hours or overnight.
